Himawari Specialty Coffee: Where real taste of coffee happens.


Filipino's are well-known as coffee lovers in the world. We love it so much that we consumed it even three times a day. And, our society is lead by young working professionals who works at night, who drinks coffee to stay awake. Some coffee drinker loves the bitter taste their coffee beverages brings. Some say, it makes them awake throughout their night duty. Coffee gives them a classic ecstasy compared to other drinks. But, have you ever wondered what is the real taste of high grade coffee or what you called, " specialty coffee" compared to a commercialized one. From, Hayman article said that "a third wave coffee movement continues to takeover worldwide, and specialty coffee has become the new everyday standard for a new generation of coffee lovers".


So, have you heard about Specialty Coffee here in the Philippines. If not yet, allow me to introduce you to the world of Specialty Coffee. Upon our visit at Himawari Specialty Coffee Shop in Silang for a day of coffee tasting; Mr. Yutaka Shinozaki, owner and SCA graduate talks about Specialty Coffee and, they offer the best and good coffee bean in town.

What is Specialty Coffee? It is an Arabica Coffee beans with a certified Q grader of 80+ points, with minimal defects, a high grade green coffee bean with excellent or outstanding quality in fragrance, aroma & flavour.


They are grown in high altitude area. And, their flavor and taste are resulted of the unique characteristics and soil composition in which they are produced.

Why does Specialty Coffee special? 
It is special because it has a better taste with wide variety of flavor diversity, more nutritious, roasted lighter to showcase its original mother nature taste and its not chemically or flavored coffee. Specialty coffee is so special because it values sustainability, quality, cooperation, and most importantly people who planted it.

Coffee Roasting Machine 

We also learned how coffee roasting is done by Specialty Coffee Roaster Expert, Mr. Shinozaki. He tells how good coffee are made by roasting. In comparison, specialty coffee and manufacturers make sure to continually meet the highest standards of quality, purity, sustainability and processing. Also, he reiterate that in order to provide or marked the coffee, as good coffee. You need to have this three contents: good coffee beans, good roasting and good method. 

Specialty Coffee Hand-Drip

If your a true coffee lover, you will be able to distinguish a commercialized one and from what you called "specialty coffee", and the new wave coffee has different suble flavors like: blueberries, milk chocolate, honey, mangoes, star anise, cane sugar, and beyond. 

Coffee Hand-Drip Method

Thru, the method of Coffee Hand-Drip, you'll taste the unique blend of good coffee bean at Himawari. We, tried to make our own coffee by using the hand drip method, time is measured, the grind coffee has exact measurements together with the water level, upon pouring the hot water, you need to start it from the center, a foam like structure will appear, then you can continue in the corner, in a circling movement. Hand-drip should last 1 minute to 30 secs and the level of water should reach 160 ml only. Then, afterwards, we started coffee tasting of different specialty coffee that they offer. 


It's also in the hand of a skillful roaster to bring out the real citrus flavor of the coffee. And, I'm grateful that I met the owner and a Master Specialty Coffee Association (SCA) skilled Roaster of Himawari Specialty Coffee named Mr. Yutaka Shinozaki who introduced Specialty Coffee to us and teaches how real coffee is produced. 


Yes, you can only called yourself a Coffee lover if you have knowledge and known what is the real good coffee, a drink that has low caffeine content, nutritious and fruity and roasted in light temperature.
